REAL LIFE NEWS: DON’T BOTHER TO THAW YOUR STEAK BEFORE COOKING

You can’t beat a fresh slab of beef steak, brought home from the butcher and slapped into a pan right away. But that’s not always possible, so many people keep steaks in the freezer, ready to thaw out and cook whenever it’s convenient.

But I’ve just read an article that says you don’t need to thaw the steak out: cooking it from frozen not only provides as good a result as the thawed steak, it actually turns out better.

The claim comes from America’s Test Kitchen, who have published a video showing their test. They cut steaks in half and then froze them. One half, they thawed out before cooking; the other half, they left in the freezer until the cooking started. Both steaks were then cooked using the same method, seared for 90 seconds on each side then put in an oven until they reached the temperature required for them to be medium rare.

The result was that the frozen steak was cooked more evenly throughout than the thawed meat, lost less moisture, and tasted better.

So there you have it. You can save yourself time by just chucking the frozen lump of flesh onto the stove, and get a better result.
